Ambrosia Parfaits

one 16 ounce carton of vanilla yogurt
1/4 cup of crushed pineapple in juice, drained

1 banana, peeled and cut into 1/4 inch thick slices
one 11 ounce can of mandarin oranges in light syrup, drained

1 tablespoon of flaked coconut, toasted
4 strawberries, sliced



Spoon yogurt onto several layers of heavy duty paper towels; spread to 1/2 inch thickness. Cover with additional paper towels; let stand 5 minutes. Scrape yogurt into a bowl, using a rubber spatula. Add pineapple, and stir well.
Spoon 2 tablespoons yogurt mixture into each of 4 (6 ounce) parfait glasses; top evenly with banana slices. Spoon 2 tablespoons yogurt mixture over each banana layer; top evenly with orange segments.
Dollop remaining yogurt mixture evenly over orange segments; sprinkle with coconut. Top with sliced strawberries. Yield: 4 servings
