2 medium size cooking apples, peeled, cored, and sliced 2 tablespoons of butter or margarine 2 tablespoons of brandy 1 tablespoon of lemon juice 1/2 cup of all purpose flour 1/2 teaspoon of baking powder 1/4 teaspoon of salt 1/4 cup of half and half 1/4 cup of honey 2 eggs Sifted powdered sugar
Combine apples, butter, brandy, and lemon juice in a small skillet. Cook over medium heat 5 minutes; set aside. Combine flour, baking powder, and salt in a small mixing bowl, stirring well; add half and half, honey, and eggs, stirring until smooth. pour 1/3 cup of batter into a lightly greased 9 inch pieplate. Bake at 400ºF. for 4 minutes or until set. Spoon apple mixture over crust; pour remaining batter over apples. Bake an additional 20 minutes or until lightly browned. Sprinkle with powdered sugar, serve warm. Yield: 6 servings |
