| | Fruit with Peanut Yogurt Sauce
1/2 cup of vanilla yogurt 1 tablespoon of creamy peanut butter one 8 1/4 ounce can of pineapple chunks, drained 1 medium apple, cored and cut into cubes 1 banana, sliced 1 cup of orange sections 1 cup of fresh strawberry halves 2 tablespoons of chopped peanuts
Combine yogurt and peanut butter in a small mixing bowl; stir well. Cover and refrigerate. Combine pineapple, apple, banana, orange sections, and strawberries in a medium mixing bowl; toss gently. Spoon fruit mixture into individual dessert dishes. Spoon 1 tablespoon plus 1 1/2 teaspoons reserved yogurt mixture over each serving. Sprinkle evenly with chopped peanuts. Serve immediately. Yield: 6 servings
One cup of fresh pineapple chunks may be used in place of the canned pineapple chunks. |
