| | Hot Apple Puff
3 medium size cooking apples, peeled, cored, and chopped 1/4 cup of water 1/4 cup of sugar, divided 1/2 teaspoon of almond extract 5 egg whites Sifted powdered sugar
Combine apples and water in a medium saucepan. Bring to a boil. Reduce heat; cover and simmer 8 minutes or until apples are tender, stirring occasionally. Stir in 3 tablespoons of sugar and almond extract. Remove from heat. Cool in refrigerator 10 minutes. (Mixture may be covered and refrigerated up to 12 hours.) Beat egg whites (at room temperature) until soft peaks form. Add remaining 1 tablespoon of sugar, beating until stiff peaks form. Fold in apple mixture. Spoon mixture gently into a 1 1/2 quart soufflé dish. Bake at 400ºF. for 15 minutes or until puffed and browned. Sprinkle powdered sugar over puff; serve immediately. Yield: 6 servings |
