| | Eskimo Apples 6 large red apples lemon juice 1/2 of a 10 ounce package of frozen raspberries, thawed 2 tablespoons of sugar 1/4 cup of raspberry liqueur or rum 3 tablespoons of flaked coconut 1/4 cup of ground almonds 1/2 cup of plain yogurt 1 cup of whipped cream or whipped topping sliced almonds, for garnish |
| Wash the apples well and polish with clean towel. Cut off top of each apple and discard. Carefully cut out inside of each apple to leave a 1/2 inch shell. Brush insides of apples with lemon juice. Dice the removed portions of apples, discard core and seeds. Set aside a few whole raspberries to use for garnish. In a mixing bowl, combine the diced apples with remaining raspberries, sugar, liqueur or rum, coconut and almonds: fold in yogurt. Spoon mixture into apples. Top each apple with a dollop of whipped cream. Garnish with sliced almonds and reserved raspberries. Serve at once. Serves 6 | |
