one 8 pound turkey 4 cups of breadcrumbs, freshly made 4 tablespoons of butter, melted 2 tablespoons of honey 1/2 cup of raisins 1/2 cup of boiling water grated rind of 1 lemon 1/2 teaspoon of cinnamon 2 eggs, lightly beaten 1/2 teaspoon of salt freshly ground black pepper 4 tablespoons of solid shortening 2 teaspoons of paprika
To prepare the stuffing, place the breadcrumbs in a bowl. Add the butter and honey. Soak the raisins in boiling water for 5 minutes. Drain and add raisins to breadcrumbs. Stir in the lemon rind, cinnamon, eggs, salt and pepper. Fill the stuffing into the turkey cavity and secure with poultry lacers or truss with string. Rub the outer skin with shortening and sprinkle with paprika. Roast the turkey uncovered in a preheated 350ºF. for 2 1/2 to 3 hours. Cover the turkey with foil and allow it to stand 20 minutes before carving. 6 - 8 servings
