Mashed Lima Beans
3 packages of frozen lima beans 2/3 cup of light cream 1 tablespoon of butter or margarine Salt and pepper to taste |

Cook the lima beans in about 2 cups of salted boiling water until very tender. Drain thoroughly, and mash the beans well, or put them through a ricer or a food mill. Heat the cream and butter, and beat it gradually into the mashed lima beans, using a wooden spoon. Season with salt and pepper to taste.
