Linguine
with Three Cheeses
1 pkg. (1 pound) of spinach linguine
1/4 cup (1/2 stick) of butter or margarine
1/2 cup of light cream
1 cup of grated Swiss cheese
1 cup of grated sharp Cheddar cheese
1/4 cup of grated Parmesan cheese
1/2 teaspoon of salt
a dash of pepper
2 tablespoons of chopped parsley, optional |

Cook linguine as package label directs.
Meanwhile, heat butter and cream in medium saucepan until butter is
melted.
Add Swiss cheese, Cheddar cheese, 2 tablespoons Parmesan cheese, the
salt and pepper; cook over low heat, stirring constantly, until sauce is
blended and fairly smooth. Keep warm.
