Liver & Macaroni Casserole

1 pound of diced liver
1/4 cup of shortening
1/2 cup of onion, or more
1 clove garlic, chopped
8 ounces of mushrooms
1 can of tomatoes
One 6 ounce can of tomato paste
2 teaspoons of salt
1 teaspoon of brown sugar
8 ounces of macaroni
3/4 cup of grated cheese

Brown liver, onions, garlic and mushrooms in shortening. Add tomatoes, tomato paste, salt and brown sugar, simmer a few minutes. Cook macaroni in salted water until tender. Put in a greased baking dish. Pour liver mixture over macaroni. Sprinkle with cheese. Bake at 350ºF. for 25 to 30 minutes. A good way to get the kids to eat liver if they don't know.
