Liver Fricassee

1 pound of beef liver, cut into 2 x 1/2 inch strips
3 tablespoons of flour
1 1/2 teaspoon of salt
3 tablespoons of fat
3 cups of water
1/2 cup of catsup
1 1/2 tablespoons of salt
2 cups of potatoes, peeled & diced
1 1/2 cups of carrots, diced
1 medium onion, chopped
4 stalks celery, cut into small pieces

Dredge liver in flour and 1 1/2 teaspoons salt, brown in fat. Combine water, catsup, salt and add to liver. Bring to a boil. Add potatoes, carrots, onions and celery. Cover and cook gently 30 minutes. Serves 6.
