| Liver Loaf 2
1 1/2 pounds of liver 1 cup of bread crumbs 2 tablespoons of tomato catsup juice of 1/2 lemon 1/2 pound of pork sausage 1 small onion, finely chopped 1 egg, well beaten 1 teaspoon of salt 1/4 teaspoon of pepper 1/4 teaspoon of paprika bacon |

Remove skin from liver, cut into slices and cook in boiling salted water for 15 minutes. Drain and put through food chopped, add all remaining ingredients except bacon. Mix well: adding 1/4 to 1/2 cup of water or milk if the mixture seems too dry. Turn into a loaf pan lined with slices of bacon. Press mixture firmly into pan and place additional strips of bacon over the top. Bake at 350ºF. for 1 hour. 6 -8 servings |
