2 tablespoons of butter 1 onion, chopped 1/2 pound of calves liver, chopped 1/2 teaspoon of salt freshly ground black pepper 1 egg 1 egg yolk 2 tablespoons of fine dry breadcrumbs 1/2 teaspoon of marjoram 1/2 teaspoon of sage 1 tablespoon of parsley 1 package of frozen individual patty shells, baked 1 egg, beaten
Heat the butter in a frying pan, add the onion and fry gently until soft. Remove from the heat and mix thoroughly with the liver, salt, pepper, egg, egg yolk, breadcrumbs and herbs. Remove the center lids from the thawed patty shells and fill the shells with the liver mixture. Place on a buttered baking sheet. Replace the lids loosely, brush the patty shells with beaten egg and bake in a preheated 400ºF. oven for 25 minutes until golden brown. 6 servings
