Liver with Gravy

1 pound of beef liver
Flour
2 medium onions, sliced
salt and pepper to taste
3 tablespoons of shortening

Sprinkle flour over liver and pound into it using enough flour to coat liver well. Put liver and onions that have been seasoned with salt and pepper in melted shortening and brown. Add enough water to cover and simmer for 30 minutes. More water may be added if gravy is too thick. 4 servings
