Manicotti with Beef

12 manicotti shells
2 tablespoons of olive oil
1 small onion, chopped
1/2 pound of ground beef
1/4 pound of Italian sweet sausage
3 1/4 cups of marinara sauce
1/4 cup of Italian style bread crumbs
1 cup of grated mozzarella cheese
2 tablespoons of finely chopped parsley
salt and pepper to taste
1/2 cup of water
3 tablespoons of grated Parmesan cheese

Cover manicotti shells with boiling water; let stand for 5 minutes. Drain; rinse in cold water.
Heat oil in frying pan. Add onion, ground beef and sausage. Cook over moderate heat, breaking up meat and sausage with fork, until meat is lightly browned. Remove from heat and drain well. Let meat mixture cool for 5 minutes. Add 1/4 cup marinara sauce, bread crumbs, mozzarella cheese, parsley, salt, and pepper; mix well.
Preheat oven to 375ºF.
Heat remaining 3 cups marinara sauce with 1/2 cup of water.
Stuff each manicotti shell with 1/3 to 1/2 cup filling. Pour 3/4 cup of heated sauce into bottom of 13x9x2 inch baking dish. Place stuffed manicotti on top of sauce; top with remaining sauce. Cover with foil and bake for 45 minutes. Uncover and sprinkle with Parmesan cheese. Bake, uncovered for 5 minutes more. Remove from oven and serve. S
