Microwave Stuffed Manicotti

16 manicotti shells
10 oz. pkg. frozen chopped spinach, cooked & drained
1 c. cottage cheese
1 c. shredded mozzarella cheese
1/2 c. sour cream or half & half
1 egg, slightly beaten
1/2 c. chopped parsley
1 clove garlic, crushed
4 c. spaghetti sauce
1/2 c. Parmesan cheese

Cook manicotti shells according to directions. In bowl, combine spinach, cheeses, sour cream, egg, parsley and garlic. With an ice tea spoon, fill each shell with mixture. Pour half the sauce in a shallow glass (2-3 quarter) baking dish. Arrange shells in a single layer. Pour remaining sauce over shells, sprinkle with Parmesan cheese. Microwave covered with wax paper 10-12 minutes or until hot in the center. Rotate dish twice.
