| Three Cheese Manicotti
1 lg. jar Prego spaghetti sauce 2 c. shredded Mozzarella cheese 1 c. cottage cheese 1/2 c. grated Parmesan cheese 2 beaten eggs 1/4 c. parsley 1/2 tsp. season salt 1/8 tsp. pepper 8 Manicotti shells (cooked) |
| Heat sauce, simmer for 10 to 12 minutes. Meanwhile, combine 1 cup of the Mozzarella cheese, the cottage cheese and the parmesan cheese. Add eggs, parsley, salt and pepper. Mix lightly. Stuff manicotti shells with cheese mixture. Pour 1/2 c. of sauce mix into a casserole dish 12 x 7 1/2 x 2. Arrange Manicotti in dish, pour rest of sauce on top. Sprinkle with remaining Mozzarella. Bake at 350ºF. for 30 minutes. Serves 6. Three Cheese Manicotti
2 c. water 2 (6 oz.) can tomato paste 1/2 c. diced onion 1 can diced mushrooms 2 tbsp. parsley 2 tsp. oregano 2 tsp. salt 1 tsp. sugar 2 c. shredded Mozzarella cheese 1 c. ricotta cheese 1/2 c. Parmesan cheese 2 eggs, beaten 1/4 c. parsley 1/2 tsp. salt 1 pkg. manicotti shells, cooked and drained
Combine first 8 ingredients. Simmer uncovered for 30 minutes, stirring occasionally. Combine eggs, cheese, parsley, salt, and 1/8 teaspoon pepper; mix lightly. Stuff cooked shells with cheese mixture. Pour 1/2 of sauce in 9 x 13 inch dish. Pour remaining sauce over shells. Bake at 350ºF. for 30-35 minutes; cover with foil. Let stand 10 minutes. |
