Cream Sauce for Manicotti

6 tbsp. butter
6 tbsp. all-purpose flour
2 c. milk
1/2 c. heavy cream
1 tsp. salt
Pepper to taste

Melt butter in saucepan. Add flour; stir with a wire whisk. Add milk gradually; cook, stirring vigorously until mixture is hot, smooth and thickened. Add heavy cream, salt and pepper. Taste for seasonings. Remove from heat.
