| Old Fashioned Meat Stuffed Manicotti
2 tablespoons of olive oil 1/2 pound of fresh spinach, washed, dried, and finely chopped 2 tablespoons of chopped onion 1/2 teaspoon of salt 1/2 teaspoon of oregano 1/2 pound of ground beef 2 tablespoons of fine dry bread crumbs 1 egg, slightly beaten one 6 ounce can of tomato paste 8 manicotti shells (two-thirds of a 5 1/2 ounce package), cooked and drained 1 1/2 tablespoons of butter, softened, optional 1 to 2 tablespoons of grated Parmesan or Romano cheese, optional Mozzarella cheese, shredded
Heat olive oil in a skillet. Add spinach, onion, salt, oregano, and meat. Mix well, separating meat into small pieces. Cook, stirring frequently until meat is no longer pink. Set aside to cool slightly. Add bread crumbs, egg, and 2 tablespoons of tomato paste; mix well. Stuff manicotti with mixture. Put side by side in a greased 2 quart baking dish. If desired, spread butter over stuffed manicotti and sprinkle with the grated cheese. Spoon remaining tomato paste on top of the manicotti down the center of the dish. Sprinkle mozzarella cheese on top of tomato paste. Cover baking dish. Bake at 425ºF. 12 to 15 minutes or until mozzarella melts. 4 servings
