Old-Fashioned Spicy Peach Cobbler

One 29 ounce can of sliced peaches, drained, reserve 1 cup of syrup
1/2 cup of firmly packed brown sugar
2 tablespoons of cornstarch
1/8 teaspoon of ground cinnamon
1/8 teaspoon of ground cloves
2 tablespoons of cider vinegar
1 tablespoon of butter or margarine
1 cup of all purpose biscuit mix
1/2 cup of finely shredded sharp Cheddar cheese
2 tablespoons of butter or margarine, melted
1/4 cup of milk

Place the drained peaches into a shallow 1 quart baking dish. Set aside. Mix the brown sugar, cornstarch, salt, cinnamon, and cloves in a saucepan. Blend in reserved peach syrup and vinegar, add 1 tablespoon of butter. Bring the mixture to boiling, stirring frequently, cook until thickened, about 10 minutes. Pour over the peaches and set in oven at 400ºF. Combine the biscuit mix and cheese. Stir in the melted butter and milk to form a soft dough. remove dish from oven and drop dough by heaping tablespoons on top of hot peaches. return to the oven and bake for 20 minutes, or until the crust is golden brown. Serve warm. Makes 6 servings
