| | Old Fashioned Macaroni in Browned Butter with Grated Cheese
1 pound of macaroni 1 cup of butter 1/2 cup of freshly grated kefalotyri or Parmesan cheese or more to taste
Cook macaroni according to directions on the package, adding 1/4 cup cooking oil and 1 teaspoon of salt. Drain. Rinse under hot water. Brown butter in a saucepan, stirring constantly. Return the macaroni to the pot in which it was cooked, or place it in a warm serving dish. Drizzle the browned butter over it. With two spoons lift the macaroni to coat all the strands evenly. Cover with freshly grated kefalotyri. Serve at once. 4 to 6 servings |
