| | New Peas in Rice Ring
1 package (6 or 6 3/4 ounces) of seasoned wild and white rice mix 3 pounds of fresh peas Butter
Cook rice mix according to package directions. Meanwhile, rinse and shell peas just before cooking to retain their delicate flavor. Cook covered in boiling salted water for 15 to 20 minutes or until peas are tender. Drain and add just enough butter so peas glisten. Butter a 1 quart ring mold. When rice is done, turn into the mold, packing down gently with spoon. Invert onto a warm, serving platter and lift off mold. Spoon hot peas into center of rice ring just before serving. About 6 servings
