| | Old Fashioned Gazpacho Garden Soup
3 large tomatoes, chopped 1 clove garlic, crushed 1 small cucumber, chopped 1 green pepper, chopped 1/2 cup of sliced green onions 1/4 cup of chopped onion 1/4 cup of minced parsley 1 teaspoon of crushed rosemary 1/4 teaspoon of crushed basil 1/2 teaspoon of salt 1/4 cup of olive oil 1/4 cup of salad oil 2 tablespoons of lemon juice 2 cups of chicken broth or 3 chicken bouillon cubes dissolved in 2 cups boiling water, then cooked
Combine all ingredients except chicken broth in a large bowl. Toss gently. Stir in chicken broth; chill. Serve in chilled bowls with garnishes. 6 servings |
