Old Fashioned
Gingered Turnips
2 pounds of yellow turnips, pared and cubed
1 tablespoon of minced onion
1 1/4 cups of beef stock
1/2 teaspoon of ground ginger
1/2 teaspoon of sugar
2 teaspoons of soy sauce |

Combine all ingredients in a saucepan; simmer covered until
turnips are tender, about 15 minutes. Drain; mash turnips with potato masher
or electric mixer until fluffy; adding cooking liquid as needed for desired
consistency. 6 servings |
