| | Old Fashioned Lettuce Soup
2 tablespoons of butter or margarine 2 tablespoons of flour one 10 ounce can of condensed chicken broth 1 soup can of water 1/2 small head lettuce, cored and coarsely chopped 1/4 cup of thinly sliced celery 1 tablespoon of chopped watercress salt and pepper
Melt butter in a saucepot; stir in flour and cook until bubbly. Gradually stir in chicken broth and water; bring to boiling, stirring occasionally. Cook 1 minute. Stir in lettuce, celery, watercress. Season with salt and pepper to taste. Cook until vegetables are crisp tender, about 5 minutes. About 3 servings |
