| | Old Fashioned Pioneer Potato Soup
1 quart of chicken stock 4 potatoes, chopped, about 4 cups 2 cups of sliced carrots 1/2 cup of sliced celery 1/4 cup of chopped onion 1 teaspoon of salt 1/2 teaspoon of marjoram, dill weed or cumin 1/8 teaspoon of white pepper 1 cup of milk or half and half 2 tablespoons of flour Garnishes: paprika, sliced green onions, crisply cooked crumbled bacon, chopped pimento, snipped chives or parsley, or grated Parmesan cheese
Combine all ingredients except milk, flout and garnishes in a large saucepan. Bring to boiling; simmer 30 minutes. Gradually add milk to flour, stirring until smooth. Stir into soup. Bring soup to boiling; boil 1 minute, stirring constantly. Garnish as desired. 4 to 6 servings
Potato Soup with Sour Cream: Follow recipe for Pioneer Potato Soup. Before serving, stir in 1/2 cup of sour cream. Heat; do not boil.
Pureed Potato Soup: Follow recipe for Pioneer Potato or Potato Soup with sour Cream, omitting the flour. Puree in an electric blender before serving. Reheat, if necessary. |
