4 tablespoons of margarine or butter 1/2 cup of flour 1 cup of milk 1 pound of beef liver 1/2 pound of salt pork 1 large onion 1 egg 1 teaspoon of salt 1/4 teaspoon of black pepper
Melt margarine in small saucepan; blend in flour. Gradually add milk, stirring briskly until smooth. Cook over medium heat stirring constantly until thick and bubbly; cool. Cut liver, pork and onion into small pieces. Puree in small amounts in blender at high speed or put through food grinder. Stir pureed mixture into white sauce; blend well. Add egg, salt and pepper; mix well. Pour into a well buttered 9x5x3 inch baking dish. Cover the top with foil, sealing edges tightly. Place in large baking pan. Pour boiling water into baking pan to a depth of 2 inches. Bake in a 350ºF. oven for 1hour. Remove from oven and lift off cover. Cool. Store covered in refrigerator. Serve in 1/2 inch slices. 10 servings |
