| Cucumber Pate
2 cups (1 large) peeled, seeded, cut up cucumber 1 cup (2 stalks), cut up celery 1 medium onion, quartered 1 small green pepper, quartered, seeded 1 cup of low fat cottage cheese 1/2 cup of mayonnaise 1 envelope of unflavored gelatin 1/4 cup of boiling water 1/4 cup of cold water |

Lightly oil 5 cup mold or 1 1/2 quart mixing bowl. In blender or food processor, coarsely chop cucumber, celery, onion and green pepper. remove, set aside. In blender or food processor, combine cottage cheese and mayonnaise. Blend at medium speed until smooth. In medium bowl, dissolve gelatin in boiling water, stir in cold water. Add chopped vegetables and cottage cheese mixture, mix well. Pour into prepared mold. Refrigerate until firm. Unmold onto serving plate. Garnish as desired. Serve with assorted crackers, thinly sliced rye snack bread or melba toast rounds. Makes 4 1/2 cups |
