Pate Recipes

 

Perfect Pate

6 tablespoons of butter
2 pounds of chicken livers
1 pound of sliced mushrooms
2/3 cup of sliced scallions
2 teaspoons of salt
1 1/3 cup of dry white wine
2 cloves garlic, minced
1 teaspoon of dry mustard
1/4 teaspoon of rosemary
1/8 teaspoon of dill
1/2 pound of butter




Melt the butter and add livers, mushrooms, onions and salt. Simmer for 10 minutes and add the remaining ingredients.  Cover and cook until livers are done. Cool and put thru a food mill or a blender. Add the 1/2 pound of butter and blend thoroughly with a fork. Pack into crocks or jars. This makes about 3 medium crocks.
