Cannoli Filling
2 cups of ricotta cheese
1/4 cup of bitter sweet chocolate chips
1/2 cup of confectioners' sugar
1/4 teaspoon of vanilla
Dash cinnamon
Pass ricotta cheese through strainer. Add remaining ingredients and hand mix gently. Chill until ready to stuff cannoli shells. (Fills 6 shells.) |

1/4 cup of semi-sweet chocolate bits
1 teaspoon of vanilla
1/2 cup of candied cherries
Blend cheese and sugar until smooth. Add remaining ingredients. Put filling into cannoli shell by teaspoon. |
