French Pastry Cookies

1 cup of oleo (Imperial), softened
1/3 cup of whipping cream
2 cups of flour

Mix together oleo and whipping cream. Then add flour. Mix by hand then chill for several hours or overnight. Heat oven to 375ºF. Roll on floured board and cut out with small cutter. (Roll 1/4 inch thick.) Dip cookies into granulated sugar and place onto ungreased cookie sheet. Prick each cookie with fork (3 x each). Bake for 7 to 10 minutes or until puffy. Remove from cookie sheet immediately.

Icing:

1 teaspoon of vanilla
1/4 cup of oleo, soft
3/4 cup of powdered sugar
1 egg yolk

Mix together. Spread icing on one cookie and sandwich together.
