 Italian Pastry Cookies

1 cup of Crisco
1/2 cup of sugar
2 eggs, separated
4 tablespoons of evaporated milk
2 1/2 teaspoons of orange extract
2 1/2 teaspoons of lemon extract
1 teaspoon of vanilla
Rind of 1 orange and 1 lemon
2 1/2 cups of flour




Cream shortening and sugar. In another bowl combine egg yolks, rind sand flavorings. Add to sugar and shortening and beat well. Add flour, mix well. Refrigerate for at least 1 hour. Shape into balls, use a greased cookie sheet. Press down with index finger and brush with slightly beaten egg white. Garnish as desired, chopped nuts, whole almonds, cherries, etc. Bake at 350ºF. until brown, about 15 minutes.
