Pesto & Cream Cheese Round
8 ounces of cream cheese, softened 3/4 cup of fresh parsley, chopped 1/3 cup of parmesan cheese 1/4 cup of pine nuts, chopped 1 clove garlic, crushed 1 1/2 teaspoon of dried whole basil 1/8 teaspoon of salt Dash pepper 1/4 cup of olive oil 1 tablespoon of butter or margarine, melted 1 tablespoon of boiling water Pimento strips for garnish (optional) |

Shape cream cheese into a circle on serving dish; set aside. Combine parsley and next nine ingredients and stir well. Spoon onto cream cheese round. Garnish if desired. Cover and chill at least 2 hours. Serve with crackers or toasted pita triangles. |
