Quiche Alla Roma

Salt and pepper
One 9 inch pie shell
2 eggs lightly beaten
1/4 teaspoon of Dijon mustard
1/4 cup of finely chopped onion
1 cup of (well packed) grated Cheddar cheese
1 tomato, thinly sliced
1 green pepper, cut in thin strips
1 tablespoon of oregano
1/4 pound of thinly sliced Genoa salami

Preheat oven to 350ºF.  Combine eggs, salt, pepper, mustard, onion and cheese. Spread in bottom of shell. Arrange tomatoes, pepper slices and optional salami on top and sprinkle with oregano. Bake 35 to 40 minutes until pastry is cooked and egg is set.
