Asparagus Quiche 3

one 9 inch Unbaked Piecrust
1 1/2 cups of asparagus cut into 1 inch pieces cooked and drained
2 cups of shredded natural Swiss cheese
2 green onions, sliced
1 tablespoon of all purpose flour
3 eggs
1 cup of milk
1/4 teaspoon of salt
1/4 teaspoon of pepper
1/8 teaspoon of garlic powder
Cooked asparagus spears




Preheat oven to 425ºF. Prepare unbaked pie crust. Bake 7 minutes or until crust is set, remove from oven. Reduce heat to 350ºF.
In medium bowl, toss cut asparagus, cheese, green onions and flour. Spread into piecrust.
In same bowl with wire whisk beat eggs, milk, salt, pepper and garlic powder. Pour over cheese mixture.
Bake 25 minutes. Arrange asparagus spears over quiche. Bake 5 to 10 minutes more until knife inserted about 1 inch from edge comes out clean. Let pie stand 10 minutes. Cut into wedges. 6 servings

Green Bean Quiche: Prepare as above but substitute 1 1/2 cups of cooked, drained cut green beans for asparagus.
