Bacon Quiche

Pastry for single crust 9 inch pie
1/4 cup of sliced green onion
1 tablespoon of oil
1 cup (4 ounces) of shredded natural Swiss cheese
6 slices of bacon, crisp cooked and crumbled
3 eggs, beaten
1 cup of light cream
1/2 teaspoon of salt
1/2 teaspoon of dry mustard
a dash of ground nutmeg



Preheat oven to 425ºF. Line a 9 inch pie plate with pastry, flute edges. Do not prick. Place a 12 inch square of foil over pastry, press in gently to loosely cover pastry. Add about 1 1/2 cups of dried beans to hold down foil and crust. Bake pastry at 425ºF. for 15 to 18 minutes or until the edges are lightly browned. Cool slightly, lift foil to remove beans. Reduce oven temperature to 325ºF. Cook onion in Crisco until tender. Sprinkle cheese over bottom of pastry, top with bacon and onion. Combine the remaining ingredients. Pour over cheese in pastry shell. Bake at 325ºF. for 40 to 45 minutes or until set. Let it stand for 10 minutes before serving. Makes 6 servings
