Crustless Spinach Quiche

one 10 ounce package of frozen chopped spinach
8 ounces of Gruyere cheese, grated
2 slices of day old bread, crusts removed
6 eggs, lightly beaten
4 teaspoons of grated onion
1/4 teaspoon of nutmeg
salt and pepper
sour cream, optional





Preheat oven to 350ºF. Place spinach in colander to thaw; press out all moisture. Mix spinach with cheese, bread torn into small pieces, eggs, onions, nutmeg, salt and pepper to taste. Transfer to a 8 inch buttered pie plate and bake until knife inserted in center comes out clean, about 30mnutes. Serve hot or cold, with or without sour cream garnish
