Quiche Florentine

Pastry for one 9 inch crust pie
12 slices bacon, fried crisp and crumbled
1 1/2 cup of shredded Swiss cheese
1/2 cup of finely chopped onion
1 package of frozen chopped spinach, squeezed dry
4 eggs
2 cups of light cream
1/2 teaspoon of each of celery salt and thyme
1/8 teaspoon of cayenne pepper
1 can of chopped pimentos



Preheat oven to 450ºF. Sprinkle bacon, cheese and onion in pastry lined pan. Beat eggs slightly. Add all remaining ingredients except the pimento. Pour cream mixture into pie pan. Bake 15 minutes. Sprinkle pimento over top and reduce heat to 300ºF. and bake 30 to 35 more minutes, or until knife inserted in middle comes out clean. Let stand 10 to 12 minutes before serving.
