| Holiday Quiche 1
4 eggs 4 strips bacon 3 ounces of ham 6 ounces of Swiss cheese 1 cup of skim milk 1 diced onion Salt and pepper to taste 1 cup of shredded lettuce 1 teaspoon of savory 1 teaspoon of dried parsley 1 teaspoon of chervil Prepare a favorite pie shell. Sauté bacon and onion. Mix eggs with milk and seasonings. Add ham, bacon, cheese, onion and lettuce. Pour into a pie shell that has been partially baked. Bake 25 minutes at 350ºF.
Holiday Quiche 2
1 1/2 cup of flour 2/3 cup of butter flavored Crisco 1 1/2 cup of finely crushed butter-type crackers (Hi-Ho) 1/2 cup of water 1 cup of shredded Monterey Jack cheese 1 cup of shredded cheddar cheese 2/3 cup of chopped ham, cooked sausage, pepperoni, or crumbled bacon 3/4 cup of thin sliced green onion 4 ounces of diced pimentos, drained 1/4 cup of snipped fresh parsley 1/2 teaspoon of pepper 5 eggs 1 cup of whipping cream 1 teaspoon of salt 1 cup of half and half
Heat oven to 400ºF. Combine flour and cracker crumbs. Cut in Crisco. Sprinkle with water - 1 tablespoon at a time. Press into ungreased 15 x 10 x 1 inch pan. Prick with a fork. Prepare filling by sprinkling cheese, meat, onion, parsley, and pimentos over crust. Beat eggs, creams, and seasonings. Pour filling over crust. Bake 25-30 minutes. Cool 5-10 minutes. Serve warm. Great for brunch or cut in small pieces for an appetizer.
Holiday Quiche 3
1 (9 inch) pie shell 1/4 pound of bulk sausage 1/4 cup of chopped onions 1/4 cup of chopped green pepper 1 cup of shredded cheddar cheese 6 eggs 1 1/4 cup of milk 1/4 teaspoon of salt 1 teaspoon of Worcestershire sauce
Brown sausage, onion, and pepper until brown. Sprinkle with cheese. Beat all other ingredients. Put sausage mixture in pie shell first, add cheese, then the eggs, salt and Worcestershire sauce, well beaten. Bake at 375ºF. for 35 minutes. Let stand 5 minutes before serving. May garnish with green or red pepper strips. |
