Holiday Quiche Lorraine

Baked pastry shell for 9 inch pie plate
6 slices of lean bacon, cooked and crumbled
2 cups of light Swiss cheese, shredded or light Cheddar cheese
3 eggs, slightly beaten
1/2 cup of chopped onion
1 cup of sliced fresh mushrooms
1 cup of  Half and Half
1/2 teaspoon of salt
1/8 teaspoon of pepper
1/4 teaspoon of nutmeg
Green pepper (optional)

Prepare pastry shell. Bake. Set side. Sprinkle bacon, cheese, onion and mushroom over bottom of baked pastry shell. Mix eggs, Half and Half, salt, pepper, nutmeg. Pour over ingredients in pastry shell. Cook uncovered in microwave 9 1/2 to 11 minutes at SIMMER, or until center is set. Rotate the pie plate 1/4 turn once. Allow to stand 5 minutes before serving.

*Baked pastry shell - transfer frozen pie shell from aluminum pan to a 9 inch glass pie plate. Cook uncovered in microwave 1 minute on HIGH. Prick shell thoroughly with a fork. Cook uncovered 4 minutes at HIGH. Rotate 1/4 turn twice.
