Mexican Quiche
1/4 cup of chopped jalapeno peppers 3/4 cup of grated cheddar cheese 6 eggs Lemon pepper to taste Sprinkle jalapeno peppers in greased 8" pie plate. Top with cheese. Combine eggs with salt and lemon pepper to taste in bowl. Beat with fork until smooth. Pour over cheese and peppers. Bake at 350ºF. for 25 minutes or until set. Cut into wedges. Makes 6 servings.
Mexican Quiche 2
4 ounces of Chilies, green, chopped 6 Bacon slices, cooked, crumbled 1 cup of Swiss cheese, shredded 5 eggs 2 cups of light cream 1/4 teaspoon of salt Cayenne pepper 4 Tostaco shells
Put cheese into shells. Mix bacon with drained chilies and put into shells. Beat eggs, cream and salt. Pour into shells. Sprinkle cayenne over top. Bake at 350ºF. for 25 to 30 minutes. Cool 5 minutes. Servings: 4
Mexican Quiche 3
1 Tortilla, 6" flour 2 ounces Cheese, jack 3 ounces of sausage 1 tablespoon of Green pepper, chopped 1 egg 1/4 cup of milk 1/8 teaspoon of salt Heat tortilla and place in small greased dish. Top with half of the cheese. Cook sausage and pepper and add to dish. Mix together remaining ingredients and pour over dish. Top with rest of cheese. Bake at 350ºF. for 30 to 35 minutes. Servings: 1
