Three Cheese & Spinach Quiche

1 package of frozen puff pastry
1/2 cup of diced yellow onion
1 1/2 cups of shredded jack cheese
1/2 cup of shredded cheddar cheese
one 10 ounce package of chopped spinach, thawed
1 cup of heavy cream
3 eggs
Salt and pepper
1/2 cup of chopped roasted red peppers
1/2 cup of feta cheese




Directions: On a lightly floured surface, roll out 1 sheet of thawed frozen puff pastry to 1/4 inch thick. Place in a 9" pie plate and fold the edges under. Prick the pastry with a fork, then bake at 400ºF.  for 10-12 minutes. Let cool. Sprinkle the onion, jack cheese, and cheddar cheese into the baked pastry shell. In a mixing bowl, combine the thawed spinach, cream, eggs, salt and pepper. Mix well. Pour the mixture over the onion and cheese. Top with the red peppers and feta cheese. Bake uncovered at 350ºF.  for about 50 minutes until set. Let cool slightly and serve.
