
| Quiche in Tart Shells

6 slices of Bacon; cut in 1/4-inch 1 cup of chopped white onion 2 Eggs, beaten 3/4 cup of sour cream 1/2 teaspoon of salt Pepper 1 package (12-oz) shredded Swiss cheese 9 (3-inch) unbaked tart shells Chopped chives (optional) |

Fry bacon until crisp. Drain on paper towel. In bacon grease sauté onion until tender but not brown. Drain off fat. Combine in bowl eggs, sour cream, salt, pepper, cheese, onion & bacon. Pour into tart shells. Bake at 375ºF. for about 25 minutes or until knife inserted half-way between outside & center of filling comes out clean. Garnish with chopped chives.
