 Chicken & Spinach Quiche Recipe

 

Chicken & Spinach Quiche

1 Unbaked 9" pastry shell
1 cup of chopped cooked chicken
1 cup of Shredded Swiss cheese
1 pk (10 oz) frozen chopped Spinach, cooked, well drained ( 1/2 cup)
1/4 cup of finely chopped onion
2 Eggs, lightly beaten
3/4 cup of real mayonnaise
3/4 cup of milk
1/2 teaspoon of dried basil leaves
1/8 teaspoon of pepper



Pierce pastry shell thoroughly with fork. Bake in 375ºF.  oven 10 minutes, remove. In large bowl, toss together chicken, cheese, spinach and onion; spoon into pastry shell. In small bowl, stir together eggs, real mayonnaise, milk, basil and pepper until smooth. Pour over chicken mixture. Bake in 350ºF. oven 40 minutes or until golden and knife inserted in center comes out clean. Makes 6 to 8 servings. From Geminis MASSIVE MealMaster collection at www.synapse.com/~gemini
