Ranch Quiche Lorraine

2 cups of crushed butter-flavored crackers
6 tablespoons of butter or margarine, melted
2 cups of shredded Swiss cheese
4 eggs
2 cups of heavy cream
1 packet (1.2 ounces) of ranch dressing, with bacon
1 tablespoon of dehydrated minced onion



Preheat oven to 375ºF.  In medium bowl, combine crackers and butter. Press bread crumb mixture evenly into 10-inch pie pan or quiche dish. Bake until golden, about 7 minutes. Remove and cool pan on wire rack. Increase oven temperature to 425ºF.  Sprinkle cheese over cooled pie crust. In medium bowl, whisk eggs until frothy. Add cream, salad dressing mix and onion. Pour egg mixture over cheese. Bake 15 minutes; reduce heat to 350ºF.  and continue baking until knife inserted in center comes out clean, about 30 minutes longer. Cool on wire rack 10-15 minutes before slicing. Serves 8.
