Sausage Quiche

One 12 ounce package of Jimmy Dean pork sausage, reg. or hot (cooked and drained)
6-8 ounces of shredded cheese (Monterey Jack or cheddar)
1 (9 in.) unbaked pie crust (deep dish)
3 eggs
1 1/2 cup of half and half
1/2 teaspoon of salt
Dash ground nutmeg

Preheat oven to 425ºF. Sprinkle the cheese and half of cooked sausage in bottom of the pie crust. In medium bowl, with wire whisk or fork, beat eggs; stir in half and half, salt and nutmeg. Pour mixture into pie crust. Top with remaining sausage. Bake 15 minutes (on cookie sheet). Turn oven temperature to 325ºF. and bake 20 minutes longer or until set. 



Sausage Quiche 2

1 (9 inch) pie shell
1/2 pound of pork sausage
1/2 pound of grated cheese
1 cup of half and half cream
2 eggs

Cook sausage, crumble, drain. Beat eggs and mix with cream. Line pie shell with sausage, top with cheese. Add enough salt and pepper for eggs. Pour cream and egg mixture over this. Sprinkle with paprika. Cook at 350ºF. for 35 minutes. Let cool before slicing. Can freeze and heat.
