Zucchini Quicheont
3 cups of shredded zucchini 1 cup of Bisquick 4 eggs 1/2 cup of grated cheese 1/4 cup of oil Salt, pepper, oregano & parsley to tasteMix all ingredients together. Pour into 9 inch pie pan with crust. Bake at 350ºF. for 45-50 minutes. May be garnished with chopped tomatoes and black olives. |

Creamy Zucchini Quiche 2
1 unbaked pastry shell (9-10") 2 tablespoons of Dijon mustard 3 cups of grated zucchini Salt 8 large. mushrooms, sliced 2 tablespoons of butter 2 cups of grated Monterey Jack cheese One 8 ounce package of cream cheese 1/2 cup of whipped cream 2 egg yolks 1 egg Salt & pepper to taste
Spread the bottom of a pastry shell with mustard. Bake in a 450ºF. oven for 10 minutes. Cool. Reduce oven heat to 350ºF. Place zucchini in colander, sprinkle with salt and drain 5 minutes. Sauté mushrooms in butter. Sprinkle 1 cup of Jack cheese in the bottom of the pastry shell. Spoon mushrooms on top. Squeeze zucchini to remove excess moisture. Place in shell, separating and fluffing with fingers. Beat together cream cheese, cream, egg yolks and egg, season with salt and pepper. Place the pastry dish on a baking sheet and carefully pour in egg-cream mixture. Sprinkle the remaining Jack cheese on top. Bake in a 350ºF. oven for 45 minutes, until top is puffed and golden and a knife inserted in center comes out clean. Let stand 5 minutes before cutting. Very rich. Makes 6 servings.
Zucchini Quiche 3
3 cups of thin, unpared zucchini (about 4 sm.) 1 cup of Bisquick 1/2 cup of chopped onion 1/2 cup of Parmesan cheese 2 tablespoons of parsley 1/2 teaspoon of salt 1/2 teaspoon of oregano A dash of pepper 1 clove garlic, chopped fine, or 1/2 tsp. garlic powder 1/2 cup of oil 4 eggs, slightly beaten
Mix all ingredients and put into greased 13x9 pan. Bake 350ºF. for 30-40 minutes.
