| Easy Beef & Broccoli Stir-Fry
1 1/2 pound of Beef top round steak, cut 1" thick 3 tablespoons of Soy sauce 3 tablespoons of Dry sherry or beef broth 1 tablespoon of Dark sesame oil 2 teaspoons of Sugar 1 large Clove garlic, crushed 1/8 teaspoon of Red pepper, crushed 3 cups of Broccoli flowerets 2 tablespoons of Vegetable oil 1 teaspoon of Cornstarch Hot, cooked rice 1/4 cup of Peanuts 2 tablespoons of Sliced green onions |

Slice beef steak diagonally across the grain into 1/8-inch strips. Combine soy sauce, sherry (or broth), sesame oil, sugar, garlic and red pepper. Place beef in plastic bag; add soy sauce mixture, turning to coat beef. Close bag securely; marinate in refrigerator 30 minutes, turning once. Cook broccoli in boiling water 2 minutes. Drain; reserve. Remove beef from marinade; reserve marinade. Heat oil in large skillet or wok over medium-high to high heat. Add beef; stir fry 2 minutes. Add broccoli; continue cooking two minutes. Combine cornstarch and reserved marinade. Add to beef mixture. Cook, stirring until sauce boils and thickens. Serve over hot, cooked rice; top with peanuts and sliced green onions. Serves 4 | |
