Sweet Potato Soufflé (microwave)

one 18 ounce can of sweet potatoes 1/4 cup of granulated sugar 1/4 cup of dark brown sugar 1/4 cup of margarine, melted 2 eggs 3/4 cup of evaporated milk 1/2 teaspoon of cinnamon 1/2 teaspoon of nutmeg 1/4 teaspoon of vanilla Topping: 6 tablespoons of margarine, melted 1/2 cup of brown sugar 1/2 cup of walnuts, chopped 1 cup of crushed Ritz® or Townhouse®
Combine the potatoes with the next 8 ingredients and mix well. Pour into a 2 quart casserole and microwave on 70% for 13- 16 minutes. Rotate dish once, if necessary. Combine topping ingredients and spread over potatoes. Microwave on 70% for 2 - 4 more minutes. |
