Rolled Steak

1 1/4 pound of round steak, 1/2 inch thick
1/4 cup of chopped onion
1/4 cup of bacon drippings
1 quart of soft bread crumbs
1/2 teaspoon of sage
1/4 cup of finely chopped celery
1 1/4 cup of beef broth
1 egg, beaten
salt and pepper to taste
1/2 cup of water

Wipe the steak with damp cloth, pound slightly. Sauté onion in drippings until yellow. Combine all ingredients except steak and water, adding more liquid if dry. Spread dressing over steak; roll up and secure by tying ends and center with string. Brown in small amount of fat, add water. Cover tightly and bake at 300ºF. for 1 hour or until the meat is very tender. Remove meat, make gravy from drippings. You may substitute 1 bouillon cube dissolved in 1 1/4 cups of boiling water for beef broth.
