Wipe the steak with damp cloth, pound slightly. Sauté onion in drippings until yellow. Combine all ingredients except steak and water, adding more liquid if dry. Spread dressing over steak; roll up and secure by tying ends and center with string. Brown in small amount of fat, add water. Cover tightly and bake at 300ºF. for 1 hour or until the meat is very tender. Remove meat, make gravy from drippings. You may substitute 1 bouillon cube dissolved in 1 1/4 cups of boiling water for beef broth. |
