Stuffed Fish Roll Ups
6 strips of bacon 1/2 cup of fine bread crumbs 10 scallions, minced 2 tablespoons of chopped parsley 1/2 pound of cooked scallops, chopped 1 cup of chopped apples 1/2 teaspoon of poultry seasoning 6 sole fillets Melted butter 1 can of cream of mushroom soup 1/3 cup of cream or milk 2 tablespoons of capers

Fry the bacon in a skillet until crisp. Remove from skillet and drain. reserve 1/4 cup bacon drippings. Combine the crumbs, scallions, parsley, scallops, apples, poultry seasoning and reserved bacon drippings and mix well. Spread fillets with scallop mixture and roll up. Place close together, seam side down, in a foil lined baking dish. Bake at 375ºF. for 30 minutes. brush with melted butter, then broil until brown. Mix the mushroom soup, cream and capers in a saucepan and heat through. Serve with the sole. Makes 6 servings
